So I'm graduating soon, and the in-laws are coming to down and its going to be a weekend of eating. I want to know who absolutely has the best steak in Memphis. If this has already been a thread forgive me...I saw best restaurant, pizza, wings, and burgers. What I know so far....
I have eaten at Ruths Chris, it is good, but terrible overrated and over priced, and the service was terrible. Not to mention a roach crawled on the wall out from behind a picture last time I ate there.
I went to Capriccio once, and so far they have my vote for their bone-in rib-eye.
i've never been, but i've heard folks' folly is the best.....and you pay for it.

It all starts with the cut of beef and the grade of that beef. USDA Prime is the best. Here is a link that explains this in detail.

From what Charlie himself at Charlie's meat market tells me, the only restaurants in Memphis that sell Prime are Folks Folly, Ruth's Criss, and Flemings. I also heard a rumor that some of the Steak Houses in Tunica get Prime also, but I can't verify that. They have cornered the market on Prime and they limit the supply.
Then you have to decide what cut you prefer: Filet, Porterhouse (my favorite, because on one side of the bone you get filet, and on the other, you get ribeye), Ribeye, Strip, T-Bone, etc. etc.
So, if you want to go to a restaurant and buy that steak, you may be limited to those above. Be sure to ask if the beef has been aged and for how long if you go there, and be prepared to pay big bucks.
Another option is to go to the Folks Folly meat market, attached to the restaurant, and buy your own Prime steaks, and cook them yourself. I wouldn't recommend that unless you know what you are doing. They sell Prime filet for about $20 a pound.
The next tier is USDA Choice, and this is mighty good eating too. My personal favorites are the filet at Jarrett's, or the bone-in filet at Grill 83 in the lobby of the Madison Hotel. But I'm sure there are plenty of other great steaks in town. They just aren't prime.
Next you have USDA Select, and then what Charlie's sells (and most restaurants around town use): USDA Standard, or restaurant grade as Charlie calls it.

My favorite cut right now is rib-eye, but being a college student for the last 4 and half years I haven't really had tons of steak. I had the rib-eye at Capriccio and I don't see how steak could get any better than that. I was told by someone waiting outside the restaurant that they fly in their beef from Chicago? Don't know if there is any truth to that. I think right now I'm planning on getting my free meal at Folks Folly, unless I hear other stuff in this thread.
It's been quite a while, but we used to love the Hawaiian steak at Houston's.....
The meat from Starika's meat market in Greenville, Mississippi, is the best I have ever eaten. It is worth the drive. That s where Doe's in Greenville gets there steaks.
I love the Shanti Steakhouse in Collierville. It used to be on Summer Ave. for 20 plus years, but is located on Byahlia Rd. in Collierville. They have a marinade that is a family recipe. Casual atmosphere but the steak is mouth watering. Some steaks are under 20 bucks but I think the 16oz Ribeye is about 22 or so. Anyway, if you don't want to go to Collierville, maybe the Side Porch in Bartlett(same quality but I do not know prices.)
I travel alot, so therefore I eat out quite a bit and I have found that each city has a great steakhouse or two. The one I would recommend here in Memphis is Folk's Folly. It is a little pricey but to me if you want a total dining experience you want atmosphere, appetizers, great waite staff and the most important a great steak then Folks Folly is the one.

Good rundown on steaks, but a porterhouse is not filet and ribeye. it is filet and strip steak.

I think the filet at Ronnie Grisanti's is the best steak in town.
If $$$ is not an issue, I will add to the Folk's Folly lovefest.
But for more everyday stuff, I always loved The Butcher Shop on Front Street. And they actually have the best chicken I've ever tasted in my life.

I'll be working there this weekend, valeting cars. I haven't eaten there. So everybody go there and valet your car and give good tips.
Sideporch in Bartlett is really good, and not as expensive as some of the other places mentioned. However, I believe the owners are retiring and either selling or closing down, so get there while you can.
Folk's and Ruth's Chris are no more expensive than other prime steakhouses around the country. In fact, they are probably a deal.
Folk's is a better intimate experience.
Ruth's has had the better steak lately, but not by much. The service and atmosphere at Ruth's push me to Folk's.
By the way, Humphrey Folk opened a steakhouse because he was denied a Ruth's franchise.

Folks Folly: I actually used to work there many yrs ago. Recently ate there in last 12 mos. I was extremely disappointed so I tried again and it sucked as well. Ever since Boggs took over it has been a slow degradation....especially for the $$$
Capriccio: Very good and very expensive.
Flemings: Pretty expensive but nothing stood out for me. It wasn't bad but nothing that knocked me over either.
Hunt-Phelan Home: Excellent!!!! Best I have found in Memphis proper. But also same level of $$$ as FF and Capriccio.
Mister B's: Very, very good and not exhorbitantly over priced. For your situation this is where I would go.
Best Steak deal in this area: A place called Vinegar Jims in downtown Arlington. The absolute best taste/value ratio I have found, period. A 12 oz filet mignon cost $18 and the marinate is awesome. This is not a high rent steakhouse...think a cracker barrel like setting with steaks.

So I went to Houstons today and had the hawaiian rib-eye. And while it was good, it in no way compares to the rib-eye I had at Capriccio. I was absolutely disappointed. Hope to go to Folks Folly and Flemings soon.
so far here are my ranks, keeping in mind I'm getting the rib-eye at each place
1.) Capriccio
2.) Ruth's Chris (i still wouldn't go back though because of the service)
3.) Houston's
I work in the building that Flemings shares a parking lot with. As I was leaving the other day, a new BMW pulled to the spot next to mine and out walked John Ford on his way to dinner with one of his baby mamas. I guess he got a sweet lease on that car. Wonder if he can turn it in before he goes to prison?

I've been meaning to ask about him on this board. In the restaurant my wife works in everybody fights over who has to take him. He never tips and will complain about something every time he comes in to try and get a free meal. The manager has to step in and offer favors or free stuff to the server that takes him, because he is so rude. He did the same thing with our valet company, claimed that we scratched his car and he demanded money. He is an ***.
Grill 83's steak is very good. And the view from the top of the hotel is the best in the city. Folks Folly have not eaten there since Boggs took over but I've heard its down in quality, Ruth Chris is good and and so is Flemings.

Well, Flemings offer valet service after 4, so b/c Ford parked the car himself, that means there is at least someone in the service industry in Memphis that didn't get stiffed. My guess is his waiter or waitress at Fleming's didn't end up as lucky.
He never tips, we don't do valet at flemings I work for a different valet service. But the incident I was referring too, where he claimed we scratched his car, when our boss came out Ford was screaming how he will buy the place and fire everybody and we're all full of **** and boss starting laughing and said "well its not for sale sir, have a good evening"
Back to steaks though I think flemings is next on my list.

Never! eat at any Butcher Shop! I won't go into details, but I've worked at the one in germantown. That being said I also agree with the service and quality of ruth Chris'. Way overpriced!
Side porch is Bartlett is awesome, but they are closing down so i'd go fast seeing as how they are still open. They have an amazing marinade. Flemings is also nice from what a few people working there have told me.
Charlie's Meat Market has always been quality if you are going to cook your own.
I'm an avg type of guy. I like the Cajun Rib-Eye at Chili's plus they donate a portion of their profits and do a lot for St. Jude. I've eaten at expensive steak houses in other states before and I have no desire to go to Folks or Flemings or Ruth's because I have better things to do with my money than pay for an overpriced hunk of cow.
I used to really enjoy the Shanti when it was on Summer Ave. Their steaks were awesome but for some reason that marinade they use didn't sit will with the wife's tummy so we stopped going there.
I'd just as soon buy the meat at Charlie's Meat Market and fix it myself before I'll pay those crazy prices.

when i want a steak i get the rib-eyes from costco. never had a bad one and a butcher relative from california was knocked out when i grilled him one.
A lot of y'all are talking about the marinade. You do not marinade a good steak. All it needs is a little salt and pepper, if you get the right quality of meat. I have been to side porch and vinegar jim's. If you want a steak of that quality, go to Kroger by the thinest sirloin, filet, etc. you can find and marinate it in Dale's, Worcestershire, and Italian dressing. Chili's has horrible steaks. The best steaks in Memphis are and in no particular order: Ruth's Chris, Flemings, Folk's, Jarret's (cut through it and you will know there is a God and he is not a vegetarian), and Owen Brennans (Filet Oscar). You can find other great steaks around the city for cheaper. And if you are going to cook your steak more than medium rare, then don't waste your money on the higher quality steaks.

agreed, although at our house we add a little olive oil and a some chicago steak seasoning from Penzey's Spices (in lieu of salt).
we also rub olive oil on the potatoes, then prick them, roll 'em in sea salt, & bake. BEST. POTATOES. EVER.
we've been getting our steaks from charlie's or high point grocery, but i may have to try costco ribeyes now...

I 2nd that motion...nothing like a 2-inch thick rib-eye sizzling on the grill...brush it with a little olive oil, a bit of fresh cracked pepper, kosher salt and a hint of fresh garlic...add some of G'town's twice baked potatoes (full of butter, sour cream, onions, pepper and white cheddar cheese) and a glass of Cabernet Sauvignon...wow!!!

Excellent recipe...the only difference at our house is to use kosher salt (why, I don't know, 'cause were Presbys)...but I think the fact that we are blessed to own two convection ovens makes for an incredibly fluffy baked potato.

Capriccio's hands down. They get them from Chicago daily.
Blues City is also good, as is the Majestic. Blue Monkey and Big Foot, also surprisingly good.

The Shanti was owned by the former owners of the old Conestoga Resturant that was located at Bull Frog Corner for years, then moved to Ashler Hall when the roads were widened and then back to Bull Frog Corner when the owners of Ashler Hall would not fix the roof. They sold the Shanti to a cousin after an unfortunate kitchen incident involving frozen french fries. The marinade was concocted from several recipies and perfected over the years. The Side Porch uses the same marinade and the same beer roll recipe because it was started by yet another cousin.
There's a new restaurant out in Collierville (near the square, next to the police station) called the Olde Church Steakhouse. You'll spend an ungodly amount of money, but the food is fantastic (kobe beef and a phenomenal wine list).
Oh, the old Conestoga! Those of us who were blessed to eat there are....well, truly blessed! The experience alone of going into that real, dark shanty was worth the trip. I never did look under the tables or into the dark corners. The steaks were heavenly.

Exactly. One side's the Tenderloin, the other the strip.

I'll marinate maybe 1 out of 5 times, usually with Stubbs.
The best steak I've ever had in my life was in Nashville at Demo's downtown, you could cut it with a spoon and they serve 12 different types of spaghetti as one of your side items and it was awesome and very reasonable, a girl that was with us asked for A-1 and the waiter almost took it as an insult and said "mam have you ever tried our steaks" needless to say those steaks didn't need a damn thing.
you can always have them take you to either smith & wollensky or the palm on 19th street in dc for a great steak-

Absolutely . . . . I love the garlic crusted gorgonzola stuffed fillet. About $34 bucks, if I remember correctly. Worth every damn dime, every damn time. They also have about the most generous pour in town for wine . . . where most restaurants give you a 4-5 ounce glass, Ronnie Grisantis is never less than 6 and if you are lucky enough to finish off the bottle, it will be more like 8 (as I did after the game the other night)
Nothing beats a steak at Alex's Tavern when Rocky decides to grill steaks for the football crowd on the weekends on his grill.
